Raw Carrot Cake Bites


Raw /rɔː/ adjective Uncooked, as articles of food.

Ingredients:
(makes 20)
  • 4 large carrots, grated
  • 150g of Medjool dates, pitted (~12 dates)
  • 1 cup of quinoa flakes (or regular rolled oats)
  • 1 cup of pecans
  • 1/2 cup of unsweetened shredded coconut
  • 1 tbs of coconut oil
  • 1 tsp of vanilla essence
  • 2 tbs of sugar free cocoa
  • 3/4 tsp of cinnamon
  • 1/2 tsp of nutmeg
  • 2 tbs of unsweetened shredded coconut
  • 2 tbs of chia seeds

Method:
  1. Grate the carrots into a large bowl and set aside.
  2. In a food processor add the dates, quinoa flakes, 1/2 the pecans and the coconut oil. Process until it is a nice and smooth consistency.
  3. Roughly chop the other 1/2 a cup of pecans and place into the carrot mixture with the processed date blend, 1/2 a cup of coconut, cocoa, vanilla essence, cinnamon and nutmeg.
  4. Using your hands mix it all together. If the mixture still feels quite wet, slowly add more quinoa until it is a better consistency.
  5. Roll into balls and coat with the remaining 2 tbs of coconut and chia seeds.
