(makes 20)
- 4 large carrots, grated
- 150g of Medjool dates, pitted (~12 dates)
- 1 cup of quinoa flakes (or regular rolled oats)
- 1 cup of pecans
- 1/2 cup of unsweetened shredded coconut
- 1 tbs of coconut oil
- 1 tsp of vanilla essence
- 2 tbs of sugar free cocoa
- 3/4 tsp of cinnamon
- 1/2 tsp of nutmeg
- 2 tbs of unsweetened shredded coconut
- 2 tbs of chia seeds
Method:
- Grate the carrots into a large bowl and set aside.
- In a food processor add the dates, quinoa flakes, 1/2 the pecans and the coconut oil. Process until it is a nice and smooth consistency.
- Roughly chop the other 1/2 a cup of pecans and place into the carrot mixture with the processed date blend, 1/2 a cup of coconut, cocoa, vanilla essence, cinnamon and nutmeg.
- Using your hands mix it all together. If the mixture still feels quite wet, slowly add more quinoa until it is a better consistency.
- Roll into balls and coat with the remaining 2 tbs of coconut and chia seeds.
